Honey Chipotle Queso Dip

Ingredients

32 oz Velveeta cheese, cubed

12 oz pepper jack cheese, cubed or shredded

½ white onion, diced

2 jalapeños, diced (remove seeds for mild heat)

2 cans diced tomatoes, undrained

1 tablespoon garlic powder

3 tablespoons Ope We’re Smokin’ Honey Chipotle Rub

Smoker Settings

Temperature: 250°F

Cooking Time: 1 hour

Instructions

Prep the Ingredients

Dice the onion and jalapeños.

Cube both cheeses for easier melting.

Build the Queso Base

Combine:

Diced tomatoes 

Diced onion

Diced jalapeños

Garlic powder

Honey Chipotle Rub

Velveeta and pepper jack cheese cubes

Give it a light stir to spread out the ingredients.

Smoke It

Place the pan in the smoker at 250°F.

Smoke for 1 hour, stirring halfway through to help the cheese melt and the seasoning blend in

Stir until smooth and creamy.

Serve hot with tortilla chips, pretzels, veggies, or drizzle over nachos, tacos, or burgers.
